Cauliflower Fritters

- 1 large head of cauliflower, grated
- 1 large egg, beaten
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves of garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
Instructions:
- In a large bowl, mix together grated cauliflower, beaten egg, flour, Parmesan cheese, minced garlic, salt, and pepper.
- Heat a large frying pan over medium heat and add enough oil to shallow fry the fritters.
- Using a spoon or cookie scoop, form the mixture into small fritters, about 2 inches in diameter.
- Fry the fritters for 2-3 minutes on each side, or until golden brown.
- Remove from the pan and place on paper towels to drain excess oil.
- Serve hot with your favorite dipping sauce. Enjoy!
